This is experiential dining at its best, where you will watch and engage with the Chefs whilst they create, evolve, and develop a memorable menu right before your eyes. As Chef Ricki and his team will be cooking and plating each dish in front of you there will be opportunities throughout the evening to ask about the development process and the meticulous process of sourcing ingredients, whilst tasting them! The dishes served have gone through the development stages in the kitchen, with consideration to texture, seasonality, presentation and much, much more.

The evening will include:
- Two introductions followed by five course developmental menu*
- Chef introduction and commentary
- Wine flight available at a supplement
Evening begins at 6.30pm
Dinner service at 7pm
This will be a relaxed evening in the intimate ambience of The Green Room – numbers are limited to 16 people only.

CHARLES COULOMBEAU - 6th MARCH 2024
Charles Coulombeau is a renowned chef and the owner of La Maison dans le Parc restaurant in Nancy, France. Together with his wife Rozanne, who manages the front of the house, Charles has created a dining experience that is second to none. Prior to opening his own restaurant, Charles worked as the Chef de Cuisine at Gravetye Manor, where he honed his culinary skills and gained recognition for his talent.
Charles was the recipient of the Acorn Award, which recognises young professionals in the hospitality industry, and was selected to represent the United Kingdom at the prestigious Taittinger International Culinary Award for author’s cuisine. Charles went on to win the award at the international final held in Paris in January of 2020.

After having worked with the greatest, she is now the chef of her two restaurants Pouliche and Café de Luce in Paris. “My roots are French, and I let myself be carried away by what surrounds me, by what I like.
